LIME PICKLES 
2 c. dehydrated lime
2 gal. water
6 c. white vinegar
9 c. sugar
1 tbsp. celery seed
1 tbsp. cinnamon buds
2 tbsp. plain salt
2 tbsp. mixed pickling spice (take out red pepper)
1 gal. or more cucumbers
1 tsp. green food coloring

Cut cucumbers into 1/2 to 3/4 inch chunks and soak in mixture of dehydrated lime and water. Mix well. Let stand 24 hours, stirring occasionally. Wash 3 times or until water is nice and clear. Drain. Make syrup with remaining ingredients and pour over cucumbers. Let stand 24 hours, stirring occasionally. Bring cucumbers and syrup to boil and reduce heat to simmer for 30 minutes. Put in hot, clean jars, seal and process.

NOTE: These are very sweet and chunky - but so pretty and good!!
