SOUTHWEST CHICKEN AND RICE 
A:

Cut 1 can of Fri-Chik pieces in half and then lengthwise, reserve the juice from the Fri-Chik for use later. Sprinkle over the chicken:

1 tsp. cumin
1 tsp. chili seasoning

Saute the above mixture in a small amount of oil.

B:

1 green or red pepper (or both)
1 onion

Cut the above into 4 inch rings and saute but don't cook until done. Add 1 can (4 ounce) mushroom pieces. Mix with above chicken mixture.

C:

Add:

1 c. brown rice (the kind that cooks in 10 min.)
1 can (15 oz.) diced tomatoes
1/3 c. salsa
1 can kidney beans (drained or undrained - your choice)
Liquid from Fri-Chik

Simmer all together until rice is done. Add 1/4 cup (I use 1/3 cup) Monterey Jack cheese, shredded. Stir well and enjoy!
