SOUTHWEST CHICKEN OR PORK BROWN RICE | |
3/4 lb. boneless chicken or pork, cut in strips 1 tsp. ground cumin 1 tsp. ground chili powder 1 tbsp. oil 1 sm. onion, diced 2 cloves garlic, minced 1 (8 oz.) can tomatoes, wedges 1/3 c. salsa, picante sauce or 1/4 c. water 1 1/2 c. water 1 1/2 c. UNCLE BEN'S® whole grain fast cooking brown rice 1/2 c. raisins 1/4 to 1/2 c. cheese Heat oil in pan, saute chicken or pork with spices until no longer pink. Add chopped tomatoes and salsa and water. Bring to a boil. Stir in rice and raisins. Reduce heat; cover tightly and simmer 5 minutes. Remove from heat, let stand another 5 minutes until liquid is absorbed. Sprinkle with cheese. A great FAST meal. |
