SOUTH AFRICAN STYLE BANANA CREAM 
5 bananas
3 eggs, separated
2 tbsp. rum
2 tbsp. sugar
1 c. heavy cream, whipped
Nutmeg
Ladyfingers

Mash bananas and beat until fluffy; add egg yolks and rum. Fold in half of stiffly beaten egg whites. Add sugar to remaining egg whites. Rinse parfait glasses with cold water. Fill alternately with banana cream and sweetened whipped cream. Top with sweetened egg whites; sprinkle with ground nutmeg. Refrigerate at least 2 hours. Serve with ladyfingers. Yield: 5 servings.
