SOUR CREAM APPLE PIE 
2 c. finely diced apples
1 egg, beaten
1 c. sour cream
3/4 c. sugar
2 tbsp. flour
1/8 tsp. salt
1/2 tsp. vanilla
1 (8 inch) unbaked pie shell

Peel, core and finely dice apples. In medium bowl, add sour cream, sugar, flour, salt and vanilla to slightly beaten egg. Pour this mix over apples and stir well. Pour apple mix into pie shell. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake an additional 25 to 30 minutes.

CRUMB TOPPING:

1/4 c. butter
1/3 c. brown sugar
1/3 c. flour
1 tsp. cinnamon

Cream together butter and sugar. Cut in with fork or pastry blender the flour and cinnamon. Sprinkle topping over baked pie and return to 300 degrees oven for an additional 5 to 8 minutes.
