CARAMEL BREAD PUDDING 
4 slices buttered white or raisin bread
1/2 c. packed dark brown sugar
3 eggs
1 c. milk
1/2 tsp. vanilla extract

About 1 1/2 hours before serving: Cut buttered bread slices into 1/2 inch squares. Butter double boiler top. Spread brown sugar evenly in top. Add bread cubes. Do not mix. In small bowl, with hand beater, beat eggs with milk and vanilla until mixed. Pour over bread. Do not stir.

Cover; place over simmering water in double boiler bottom and cook over medium low heat 1 hour or until knife inserted into middle comes out clean. Sauce will form underneath pudding. To serve, spoon pudding into dessert bowls; spoon sauce over.

This recipe is quick, easy and delicious!! I also add a quarter of a cup of raisins to the brown sugar before I add the bread, etc.
