SAVORY SCALLOPS 
1 1/2 lbs. scallops
8 saltine squares
8 Ritz crackers
3/4 c. Italian flavored bread crumbs
1/2 stick butter
1/2 stick butter
1/2 tsp. lemon juice
2 tbsp. shredded Mozzarella cheese (cheddar cheese may be used instead of Mozzarella)

Crush both types of crackers in a large bowl and add bread crumbs. Melt butter and together and add to dry mixture. Wash and clean scallops and add to mixture. Work the scallops into the mixture so that the scallops are evenly coated. Pour into casserole dish. Sprinkle lemon juice and then the cheese over the top of casserole. Bake at 350 degrees for 25 to 35 minutes until top is brown. Serves 4.
