CHICKEN CACCIATORE 
4 chicken breasts
1 tbsp. corn oil
2 med. onions, thinly sliced
1 clove garlic, minced
1/2 tsp. oregano
1 (8 oz.) can tomato sauce
1 sm. green pepper, chopped
1 c. mushrooms, chopped
Salt and pepper to taste

Remove all skin and fat from chicken. Brown chicken in oil. Add onion, mushrooms, green pepper and garlic and cook for a few minutes while stirring. Add remaining ingredients, cooking slowly for about 45 minutes, or until chicken is tender.
