SWEET-N-SPICY CHICKEN STEW | |
2-3 lbs. chicken parts 2 tbsp. oil 1 c. undrained pineapple chunks (8 1/4 oz.) 1/2 c. water 1 env. Chili-O seasoning 1/2 tsp. cinnamon 1 (17 oz.) can sweet potatoes 1 or 2 apples, sliced 1 (8 oz.) can tomato sauce Brown chicken; drain. Drain pineapple and save juice. Combine juice, tomato sauce, water, Chili-O and cinnamon. Pour over chicken. Cover and simmer 45 to 60 minutes. Add drained pineapple, cut up sweet potatoes and apples. Simmer 10 minutes. 4 to 6 servings. |
