FREEZER COOKIES 
4 c. shortening
4 c. brown sugar
4 c. sugar
8 lg. eggs
8 c. flour
4 tsp. salt
4 tsp. baking soda
4 tsp. baking powder
8 c. oatmeal
5 tsp. vanilla
2 c. coconut
1 c. chocolate chips
1 c. chopped nuts
1 tsp. orange extract
1 tbsp. grated orange rind

Lemon may be substituted.

Cream shortening and sugar together; add eggs one at a time. Beat well. Sift flour, salt, soda and baking powder; add to egg mixture. Add oatmeal and vanilla.

Divide into 4 portions. Add coconut to 1 portion; add chocolate chips to another portion. Stir nuts into third portion; add orange extract and orange rind to remaining portion.

Shape each portion into 2-inch-round roll or rolls; wrap in waxed paper. Place in container or wrap in foil. Freeze. Slice 1/4 inch thick; place on cookie sheet. Bake at 375 degrees for 8-10 minutes. Yield: 24 dozen.
