ZUCCHINI PIE 
2 1/2 lb. zucchini
2 tbsp. butter
1 c. diced Velveeta cheese
Salt & pepper to taste
8 Saltines, crumbled

Peel and cut zucchini into small chunks. Boil in small amounts of water for 10 minutes or until just tender; drain thoroughly. Add butter and cheese; stir until melted. Add salt and pepper. Turn into greased 10 inch pie plate; top with Saltine crumbs. Bake at 400 degrees for 15 minutes.
