EASY ZUCCHINI 
6 c. zucchini
1/4 c. chopped onion
1 can condensed chicken soup
1 c. sour cream
1 c. shredded carrots
1 (8 oz.) box seasoned stuffing mix
1/2 c. butter, melted

Cook sliced squash and onion in small amount of water for 5 minutes. Combine sup and sour cream. Fold in shredded carrots (uncooked), squash and onion. Combine stuffing and butter. Put half of stuffing mix in bottom of pan. Spoon vegetables into pan. Top with remaining stuffing. Bake at 350 degrees for 25-30 minutes.
