ONION PIE 
3 c. sweet Spanish onion, thinly sliced
8 tbsp. butter
1 1/2 c. saltine cracker crumbs
3 eggs, slightly beaten
1 1/4 c. milk
1/2 tsp. salt
Dash pepper
1/2 c. Cheddar cheese, grated
Paprika

Peel and thinly slice onion. Saute onion slices in 2 tablespoons butter until transparent. Set aside. Melt remaining butter and combine with cracker crumbs. Press into bottom and sides of a 9 inch pie pan. Spoon in onions. Beat eggs, milk, salt and pepper together. Pour over onions. Sprinkle with cheese and paprika. Bake at 350 degrees for 30 minutes or until center is firm.
