CRUNCHY BAKED CHICKEN 
1 1/2 c. crushed saltine crackers (about 40) or may use potato chips
1 1/2 c. grated Parmesan cheese
1/4 c. chopped parsley
1 clove garlic, crushed
1/2 tsp. salt
Pepper
2 (3 to 3 1/2 lb.) broiler fryer chicken (quartered)
1 c. melted butter

Preheat oven to 350 degrees. Mix crumbs, cheese, parsley, garlic, salt and pepper. Dip chicken in melted butter and then in crumb mixture. Arrange pieces in a single layer in a large shallow baking dish. Pour remaining butter over chicken. Bake 1 1/4 hours or until fork tender. Serves 8.
