ORANGE CHICKEN & STUFFING 
1 lb. boneless chicken, (cut into sm. pieces)
1 box Stove Top stuffing, dry
1 tbsp. butter
2 or 3 cleaned carrots, (sliced thin or julien)
1 1/2 c. orange juice

Melt butter in frying pan over medium heat, brown chicken about 5 minutes. Pour 1 cup orange juice into stuffing mix in a mixing bowl - set aside for a bit. Put carrots into pan, cook until desired doneness and add 1/2 cup orange juice to carrots. When carrots are done, add stuffing mix - heat until hot. One pan meal - great when you are in a hurry!
