LOUISIANA STUFFED ORANGES | |
6 med. La. Yams (canned may be used) 4 La. Navel oranges 1/2 stick melted butter 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/2 c. brown sugar 1/2 c. pecan pieces 1 oz. Grand Marnier--or rum or any liqueur you want Raisins (optional) Bake yams at 350 degrees until tender. Cut oranges in half, scoop out pulp and chop half of it. Peel yams, put in mixing bowl with chopped orange pulp, melted butter, sugar, nutmeg, cinnamon, pecans and Grand Marnier. Mix well and stuff orange halves. Sprinkle top with pecans. (May also be topped with marshmallows.) Bake at 350 degree oven 20 minutes. Yield: 8 servings. |
