AMBER - NUT BRITTLE 
2 tbsp. butter
1/2 c. water
1/4 c. dark corn syrup
2 c. sugar
2 (7 oz.) cans mixed nuts

In a heavy 10-inch skillet melt the butter. Add water and syrup and bring to a boil. Add sugar and stir to dissolve. Boil rapidly (no more stirring) to 310 degrees or hard crack stage.

Remove from heat; add nuts at once, stirring quickly. Pour out onto a lightly buttered baking sheet, spreading as thin as possible. Use 2 forks to pull brittle thin. Cool and break into pieces. Store in air tight container.
