CASHEW NUT BRITTLE (MICROWAVE) 
1 c. cashew nuts, halves
1 c. sugar
1/2 c. corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp. baking soda
1 tsp. vanilla

In a 1 1/2 quart microwave safe dish stir together sugar, syrup, salt and nuts. Microwave on high 4 minutes. Stir well. Microwave 4 minutes more. Stir in butter and vanilla, microwave for 2 minutes longer.

Add baking soda and stir until light and foamy. Immediately pour into a greased pan, spreading out thin. Cool. A pizza pan is about the right size.

Since microwave ovens vary in power, you may need to adjust your cooking time.

just make a bigger batch. I increase the ingredients by 1/4 then 1/3, which worked for me. If need be, try increasing by 1/2. Then I decreased the time by 1/2 minute, each time span. So, a net of 1 minutes less time.
