TWICE BAKED TUNA SPUDS 
2 lg. baking potatoes
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 c. butter
3 tbsp. flour
1 c. milk
1 can (6 1/2 oz.) tuna, drained
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. grated Cheddar cheese

Pierce and bake potatoes at 400 degrees for 60 minutes. Reduce heat to 350 degrees.

Meanwhile, saute onion and pepper in butter. Add flour and cook, stirring until smooth. Pour in milk and cook over medium heat until thick. Fold in tuna and seasonings. Set aside.
