TWICE BAKED TUNA SPUDS 
Microwave.

2 baking potatoes
1/4 c. chopped onion
1/2 c. chopped green pepper
1/4 c. butter
3 tbsp. flour
1 c. milk
1 (6 oz.) can tuna, drained
1/2 tsp. salt, optional
1/8 tsp. pepper
1/4 c. grated cheddar cheese
1/2 tsp. paprika

Bake potatoes as directed for microwave oven. Saute onion and pepper in butter, add flour, cook, stirring until smooth. Add milk, cook until thick, stir occasionally. Add tuna, salt and pepper. Cut potatoes, scoop out pulp and add to tuna mixture. Place skins in baking dish. Spoon in filling. Sprinkle with cheese and paprika. Place in microwave on high for 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
