AFRICAN VIOLET SALAD 
1 c. shredded purple cabbage
1/2 c. washed & shredded spinach leaves
1/2 c. sm. cauliflower flowerets
Sliced purple onion (opt.)
Salt & pepper

DRESSING:

1/2 c. sugar
1/4 c. vinegar
1 tsp. dry mustard
2/3 c. catsup
1 tsp. salt
1/2 c. minced onion (if not used in salad)
1 c. Mazola oil
1 tsp. paprika

Combine vegetables; salt and pepper to taste. Combine dressing ingredients in blender or mixer and put over vegetables just before serving. Serves 3 to 4.
