ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. zucchini (grated)
1 tsp. baking soda
1/2 c. walnuts
2 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. salt
3 c. flour

Beat eggs until frothy. Add next 4 ingredients. Mix lightly but well. Add rest of dry ingredients; blend well. Makes 2 large bread pans or 5 small. Bake at 325 degrees for 1 hour or test with toothpick. Remove from pans at once.
