ZUCCHINI BREAD OR MUFFINS | |
3 eggs 1 c. oil 2 c. sugar 2 c. zucchini, grated 2 tsp. vanilla 3 c. flour 1 tsp. salt 1 tsp. baking soda 3 tsp. cinnamon 1/4 tsp. baking powder 1 c. walnuts, chopped or pecans 1 c. raisins Beat eggs until light and foamy. Add next 4 ingredients, mix slowly but well. Add dry ingredients and mix well. Divide batter into 2 loaf pans or muffin tins. Bake at 325 degrees for 1 hour or until toothpick comes out clean. Cool 15 minutes before removing from pans. Cool on racks. Freezes well. |
