ZUCCHINI BREAD | |
3 eggs 1 c. oil 3 c. grated zucchini 2 c. sugar 2 tsp. vanilla 3 c. flour 1 tsp. salt 1 tsp. cinnamon 1 tsp. baking soda 1 tsp. baking powder 1 c. raisins 1 c. chopped walnuts Mix wet ingredients together well (can use electric mixer). Add dry ingredients gradually, mixing thoroughly after each addition. Add raisins and 3/4 cup nuts (save 1/4 for tops). Pour into greased loaf pans. Sprinkle remaining nuts on tops. Bake at 350 degrees 1 hour or until top springs back when touched lightly. |
