ZUCCHINI BREAD | |
3 eggs 2 c. brown sugar 1 c. oil 2 c. raw zucchini, grated 3 c. flour 2 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 1 tbsp. cinnamon 1 1/2 c. nuts (optional) Just combine all the "wet" ingredients and sugar in one bowl and the dry ingredients in another bowl. Slowly add the dry to the wet stirring well after each addition. Add chopped nuts (walnuts) if desired. Pour into greased or tin foil lined pans. Bake at 350 degrees for one hour. Delicious with butter, cream cheese, or just as it is! Use 9 x 5 x 3 inch pan. Makes 2 loaves. This recipe is so good that everyone who tastes this bread wants it. It is moist, and the brown sugar imparts a most delicious flavor. |
