CREAMY POTATO PUFF 
1 (8 oz.) pkg. cream cheese
4 c. hot mashed potatoes
1 egg, beaten
1/3 c. finely chopped onions
1/4 c. chopped pimento (optional)
1 tsp. salt
Pepper

Combine softened cream cheese and potatoes, mixing until well blended. Add remaining ingredients; place in 1 quart casserole. Bake at 350 degrees for 45 minutes. Serve 6 or 8.
