R.'S VEGETABLE CASSEROLE 
1/2 c. chopped onion
1/2 c. chopped bell pepper
1/2 c. chopped celery
1 can French cut green beans
1 can Niblets corn
1 can cream of celery soup
1 (8 oz.) sour cream
1 sm. jar diced pimento

CRUST:

4 c. crushed cheese crackers
1 stick butter

Mix all vegetable ingredients. Place half of cracker mixture in 9x13 casserole dish. Pour vegetable mixture in and top with remaining cracker mixture. Bake at 350 degrees for 1 hour (first 30 minutes without a cover; second 30 minutes without a cover).
