BEET BAKE 
2 bunches beets
1/2 tsp. salt
1 tbsp. lemon juice
1/2 minced sweet pepper
1/2 c. sour cream

Boil beets until tender. Peel, chop fine or press through a ricer. Add remaining ingredients. Pour into a baking dish rubbed with garlic. Top with buttered bread crumbs. Bake at 350 degrees for 20 minutes.
