PEPPER STEAK 
1 lb. beef chuck, cut in very thin strips
1/4 c. cooking salad oil
1 clove garlic, minced
1 tbsp. soy sauce
1 tsp. salt
1/4 c. water
1 c. green pepper, cut in strips
1 c. chopped onion
1/2 c. chopped celery
1 tbsp. cornstarch
1 c. water
2 tomatoes, cut in 8ths

Brown beef in oil. Add garlic, soy sauce, salt, 1/4 cup water; cook 45 minutes. Add vegetables; cook 10 minutes. Stir in cornstarch, blended with 1 cup water. Add tomatoes and cook 5 minutes longer. Serve over hot fluffy rice. Serves 4.
