PHILIPINO PORK ADOBO | |
3.6 lbs. diced pork 3 tbsp. + 1 tsp. soy sauce 2 tbsp. vinegar 2 tsp. dry garlic 1 tsp. ginger 1 bay leaf 1 1/2 tsp. salt 1 scant tsp. black pepper 1/2 tsp. hot sauce 1/4 c. cornstarch 1 1/4 c. warm water 1/2 lb. fresh potatoes 1/2 lb. med. dry onions 2 lg. green peppers Cut pork into 1 1/2 inch cubes and place in roasting pan. Combine soy sauce, vinegar and spices and pour over pork and stir to blend. Marinate pork in mixture for 30 minutes. Place pan in oven and cook at 350 degrees for 1 1/2 to 2 hours until meat is tender. Stir every 15 minutes. Mix cornstarch and warm water together and stir into pork mixture and continue to cook until mixture thickens. Skim off fat. Parboil and drain fresh potatoes, then deep fat fry them until done, then add to pork during the last 5-10 minutes of cooking. Cut onions into 6 or 7 slices (medium size) and add to pork during last 10-15 minutes of cooking. Cut peppers into 6 to 8 pieces each and add to pork 5 minutes before done. Serves 10. |
