PEAR PIE 
1 (9 inch) unbaked pie shell

FILLING:

4 to 5 c. pears, peeled and sliced
Juice of 1 lemon
1/2 c. sugar
2 1/2 tbsp. flour
1/4 tsp. nutmeg

Preheat oven to 425 degrees. In medium bowl, squeeze juice of lemon over sliced pears. Set aside. In a small bowl, combine sugar, flour, and nutmeg. Sprinkle this mixture over pears to coat. Put into unbaked pie shell.

TOPPING:

8 tbsp. butter, softened
1/2 c. dark brown sugar
1/2 c. flour

Cream butter, sugar, and flour; spread over pear mixture in pie shell. Place pie pan with pie into a large brown paper bag; fold edge, fasten securely (staple) to create a vacuum. Place on cookie sheet and bake for 1 hour.
