MARINARA SAUCE | |
1/4 c. olive oil 1 med. size yellow onion, finely chopped 2 cloves garlic, minced 2 lbs. ripe plum tomatoes, peeled & chopped 1 tsp. dried oregano, crumbled 1/2 tsp. salt 1/4 tsp. black pepper Or 1 (28 oz.) can crushed tomatoes. Heat olive oil in a medium size saucepan over moderate heat. Add the onion and saute, stirring occasionally, until soft, about 5 minutes. Stir in garlic, tomatoes, oregano, salt and pepper. Bring to a simmer then reduce the heat to low. Cook, uncovered for 25 minutes or until thick. Makes about 3 cups or enough for 1 pound of pasta. HINT: If you brown 1/2 pound ground chuck with about 2 tablespoons onion or garlic, drain and add to the sauce, it's a delicious sauce for any type of pasta. |
