CASHEW CHICKEN 
1 c. mayonnaise
3 tbsp. milk
1/2 tsp. ground cumin
1/2 tsp. onion powder
1/4 tsp. ground red pepper
1/4 tsp. garlic powder
2 chicken breasts, boned and cut into chunks
3/4 c. sesame crackers

Preheat oven to 425 degrees. Mix together mayonnaise, milk, and seasonings. Dip chicken into mayonnaise mixture and roll in cracker crumbs. Place on greased cookie sheet. Bake for 18 to 20 minutes. Serve over rice with oyster sauce and cashew nuts.

OYSTER SAUCE FOR CASHEW CHICKEN:

2 c. chicken broth
2 tsp. oyster sauce (can be found in grocery store next to soy sauce)
3 tbsp. corn starch
1/2 tsp. salt
1 to 4 tbsp. sugar
3 or 4 chopped green onions

Mix all ingredients except onions and cook until thick. Add onions just before serving. Sprinkle cashews on top.
