CHICKEN BREAST WITH CASHEW NUTS 
2 chicken breasts, boned
1 egg white
1/2 tsp. salt
2 tsp. light soy sauce
2 tsp. sherry
1/2 tsp. sugar
1/2 tsp. Crisco
2 tsp. cornstarch
3 tbsp. Crisco
1 c. cashew nuts, salted

Optional: 3 stalks celery, sliced Mushrooms, dried Ginger, minced

Dice chicken breasts. Beat egg white and mix with chicken salt, soy sauce, sherry, sugar, Crisco oil and cornstarch. Heat Crisco in wok or heavy skillet and add chicken mixture. Stir fry 1-2 minutes. Add cashews, mix well and serve hot with rice.

I used red wine because I didn't have sherry and I used only salt from my shaker. I fried Mushrooms and green pepper and added it. My husband loved it, and suggested I put that recipe in my binder.
