ZUCCHINI AND YELLOW SQUASH
CASSEROLE
 
1/2 c. vegetable oil
3 lg. onions
2 green peppers, cut in strips
1 clove garlic, minced
2 lb. yellow squash, cut in 2 x 1/2 x 1/2 inch sticks
2 lb. zucchini squash, cut as yellow squash
1 tsp. salt
1/2 tsp. pepper
2 tbsp. chopped parsley

Heat oil in large kettle over medium heat. Add onion and green pepper. Cook 2 minutes, stirring occasionally. Add garlic, squash, salt, and pepper. Cook 15- 20 minutes, stirring occasionally. Use slotted spoon to remove from pan. Sprinkle with parsley.
