CARROT AND VEGETABLE LOAF 
2 c. mashed, cooked carrots
1 c. cooked peas
1/2 c. diced celery
2 tbsp. chopped pimento
1 tbsp. parsley, chopped
2 tsp. chopped onion
1 c. bread crumbs
1 c. hot milk
2 eggs, well beaten
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. melted butter

Mix crumbs and milk. Add the remaining ingredients; mix well. Place in an oiled loaf pan and bake 40 minutes in a 350 degree oven. Remove from oven and let stand 5 minutes before unmolding. Serve plain or with cream sauce.
