PARMESAN CHICKEN | |
4-6 chicken breasts (boned and skinned) 1/2 c. Italian bread crumbs 1/2 c. Parmesan cheese 2 eggs 2 (8 oz.) cans tomato sauce 1 c. apple juice 1/2 tsp. oregano 6 oz. Mozzarella cheese, grated Coat chicken in eggs, then mixture of Italian bread crumbs and Parmesan cheese. Fry in oil until slightly brown. Chicken does not have to be done at this point. Place chicken in 9x13 baking dish. Pour mixture of tomato sauce, apple juice and oregano over chicken. Cover dish with foil and bake for 50 minutes at 400 degrees. Uncover and top with Mozzarella cheese and bake for 10 minutes. |
