15 MINUTE CHICKEN PARMESAN | |
1 (8 oz.) pkg. grated Mozzarella cheese 4 chicken breasts or 3/4 - 1 lb. chicken breast strips 1 egg or 1/4 c. milk 1/4 c. + 1 tbsp. grated Parmesan cheese 1 (15 oz.) can tomato sauce 1 tbsp. + 1 tsp. Italian seasoning 1 c. crumbled corn flakes (or bread crumbs) Pour tomato sauce and 1 teaspoon Italian seasoning into microwave safe bowl. Heat on high for 3 minutes. In bowl, mix corn flakes, 1/4 cup Parmesan cheese and 1 tablespoon Italian seasoning. Beat egg or milk in shallow bowl (large enough to hold chicken pieces). Dip chicken pieces in egg or milk, then coat in crumb mixture. Place, not touching, on microwave safe dish. Microwave chicken 2 minutes per breast or 1 minute 30 seconds for 5 breast strips. Do not turn over. Additional time if needed of only 30 seconds at a time, until almost cooked. Remove and spoon sauce over chicken. Sprinkle grated Mozzarella over chicken and microwave again for 1 minute (or until cheese starts to melt). |
