2 c. sifted all-purpose flour 1/2 c. sifted confectioners' sugar 1 c. butter TOPPING: 4 eggs, beaten 2 c. sugar 1/2 c. lemon juice (fresh is best) 1/4 c. flour 1/2 tsp. baking powder Sift together flour and confectioners' sugar. Cut in butter until mixture clings together. Press into 13x9 pan. Bake at 350 degrees for 20-25 minutes until light brown. Beat together eggs, sugar and lemon juice. Sift together flour and baking powder and stir into egg mixture. Pour over baked crust. Bake at 350 degrees for 25 minutes. Sprinkle (sift) with confectioners' sugar. |
