ITALIAN BEEF ROLL 
1 lb. ground sirloin
1 egg
3/4 c. cracker crumbs
1/8 tsp. pepper
1/2 c. onion, chopped
2 (6 oz.) cans tomato sauce
1 tsp. salt
1/2 tsp. oregano
1 c. Mozzarella, shredded

Combine meat, egg, cracker crumbs, pepper, onion, 1/3 cup tomato sauce, salt, and oregano; mix well. Shape into a 10x12 flat rectangle on waxed paper. Sprinkle the cheese over the meat.

Roll up jelly roll fashion. Seal edges well. Bake in shallow dish at 350 degrees for 1 hour. Drain off all fat. Pour remaining tomato sauce and bake 15 minutes more.
