LASAGNA ROLL UPS 
12 lasagna noodles
3/4 c. chopped onion
2 tbsp. butter
2 (10 oz.) pkgs. frozen, chopped spinach, thaw and drain
1 c. sour cream
1/2 tsp. sea salt
1/2 c. fresh grated Parmesan cheese
1 tbsp. flour
2 (8 oz.) cans pizza sauce
1 c. Mozzarella cheese

Cook lasagna noodles according to package directions. Cool in a large bowl of cold water. Set aside. Saute onion in butter until tender, about 5 minutes. Combine onion, spinach, sour cream, and salt. Set aside. Remove lasagna noodles, one at a time, from water. Pat dry with paper toweling. Spread with a scant 1/4 cup spinach mixture. Sprinkle with Parmesan cheese mixture. Roll up jelly-roll fashion. Repeat with remaining noodles. Spread a small amount of pizza sauce in bottom of a 2 quart rectangular baking dish. Arrange roll-ups in dish. Cover with remaining sauce. Bake at 350 degrees until hot and bubbly, about 30 minutes. Remove from oven and sprinkle with Mozzarella cheese. Return to oven until cheese is melted, about 3 minutes. Serves 6.
