LEMON MERINGUE PIE 
1/2 c. cold water
1/4 tsp. salt
5 tbsp. cornstarch
1 1/2 c. hot water
1 1/4 c. sugar
3 egg yolks
1/2 c. lemon juice
Grated rind of 1 lemon
1 tbsp. butter
Baked pie crust

Mix cold water, salt, sugar, and cornstarch together. Add egg yolks, juice, and rind. Gradually add hot water. Cook over moderate heat until thick and clear. Add butter. Cool. Pour into baked pie hell and top with meringue.

PERFECT MERINGUE:

Combine 1 tablespoon cornstarch and 1/2 cup water and cook until thick and clear. Cool. Combine 3 egg whites, pinch of salt, and 1/4 teaspoon cream of tartar and whip until foamy. Add 6 tablespoons sugar, one at a time, beating well each time. Gradually beat in cooled mixture. Spread on pie and bake at 350 degrees for 20 minutes.
