HERB MARINATED CHICKEN KABOBS 
4 skinless boneless chicken breasts
1/2 c. wine vinegar
1 tbsp. chopped sweet onion
2 cloves garlic
1/2 tsp. pepper
1 lg. red bell pepper
1/2 c. tomato juice
1 tbsp. brown sugar
2 tbsp. vegetable oil
1/2 tsp. oregano
2 sm. zucchini

Lightly flatten chicken breasts, cut into 3 strips length wise. Combine vinegar, and next 7 ingredients in a jar, cover and shake vigorously. Cut pepper and zucchini into 1 inch squares. Pour marinade over chicken and vegetables to cover and marinate about 1 hour. Alternate chicken and vegetables onto skewers. Broil 3-5 inches from heat 8-12 minutes. Turn and brush with marinade often.
