CAULIFLOWER SALAD 
4 c. cauliflower flowerettes
1 c. chopped ripe olives
2/3 c. chopped bell pepper
2/3 c. chopped purple onion
1/2 c. chopped pimiento
1/2 c. oil
3 tbsp. lemon juice
1/2 tsp. pepper
6 tbsp. vinegar
1 tsp. sugar

Mix ingredients together as a dressing and pour over "veggies". Refrigerate overnight. You may add 4 cups of broccoli, but you will need to add 1/2 more of the dressing.
