KIFFLES
3 c. flour
2 sticks butter
1 (8 oz.) pkg. cream cheese

Mix above ingredients and chill in refrigerator. When chilled, remove from refrigerator and roll into balls. Roll balls in confectioners' sugar (use lots of sugar). Using a rolling pin, roll flat and fill with pineapple preserves (raspberry or strawberry), flap dough over preserves so that preserves are in the middle, like a turnover. Bake at 350 degrees about 10 minutes.

VERY easy to mix up the night before! These were a huge hit at a party we had this weekend. I used raspberry, black raspberry, apricot, and lemon for the filling - it was a nice colorful platter. The one thing I'd caution though is ours were not done in 10 minutes at 350°F... we kept them in at least another 4 minutes longer, maybe even 5. If you take the tray out, you can sort of tell when they are done.

I made it for a school project and now I make all the time for a school snack and the teachers ask me to make more.
