MARINATED SIRLOIN OF LAMB 
3 1/2 lb. sirloin of lamb
1 1/2 tsp. frozen orange juice concentrate
1 tbsp. soy sauce
2 tsp. honey
2 tsp. peanut oil
2 cloves garlic, mashed

Use a sharp knife, remove the visible fat and membrane from lamb. Then place it in a 13x9 inch oven proof glass casserole.

In a small bowl, combine orange juice, soy sauce, honey, oil and garlic. Pour over lamb and rub in until lamb is completely coated. Marinate for at least 4 hours or overnight.

Preheat the broiler. Broil lamb until done the way you like it, about 7 to 10 minutes. Cut into slices. Makes 4 servings.
