MASHED POTATO ROLLS 
Mix together:

1 c. lukewarm water (or water where potato was boiled)
2/3 c. sugar
1 1/2 tsp. salt

Add:

1 pkg. dry yeast which has been dissolved in 1/2 c. lukewarm water
2 eggs
2/3 c. soft shortening

Mix in:

1 c. lukewarm mashed potatoes
7 to 7 1/2 c. flour

Knead until smooth, put in large bowl, grease top, cover with waxed paper and a damp cloth. About 2 hour before cooking, shape dough in rolls. Cover and let rise until double in size. Bake at 400 degrees for 12 to 15 minutes. Makes about 4 dozen.
