MASHED POTATO ROLLS 
1 c. instant or regular mashed potatoes
1 c. sugar
1 c. very warm water
2 pkgs. yeast

Mix potatoes, sugar, water (let sit until lukewarm); add yeast, let sit overnight or 5 to 6 hours.

Add to potato mixture: 4 eggs, beaten 1 tsp. salt 5-6 c. flour

Mix well.

1. Grease bowl; put down in it, cover and let rise 1 hour in pan.

2. Roll out and cut approximately 1/2" thick.

3. Put on greased cookie sheet; let rise 1 hour more (cover with towel). Bake at 400 degrees. Makes 2 dozen large rolls.
