MASHED POTATO ROLLS 
1 cake yeast (pkg.)
1/4 c. warm water
1/2 c. shortening
2/3 c. sugar (plus more if you wish)
2 tsp. salt
1 c. hot mashed potatoes
1/2 c. hot potato water
1/2 c. scalded milk
3 eggs, well beaten
8-9 c. flour

Dissolved yeast in warm water. Place shortening, sugar, salt, mashed potatoes, potato water and milk in large bowl. Mix until shorting melts. Cool to lukewarm. Add eggs and 2 cups flour; beat well. Add rest of flour. Place in lightly oiled bowl. Rise double. Make into buns or loaves, rise double again. Bake 12-15 minutes at 400 degrees.
