HOT SCONES 
3 c. biscuit mix
1/4 c. sugar
2 eggs
1 c. mashed potatoes (left over)
1 tbsp. butter
1 egg white, slightly beaten

Preheat oven to 400 degrees. Lightly grease baking sheet. In large mixing bowl, combine biscuit mix, sugar, eggs and mashed potatoes. Using fork, mix until smooth, dough will be soft. Turn out dough onto a lightly floured pastry cloth. Knead 5 times. Roll dough into 1/4 inch thickness, cut into 2 1/2 inch squares. Brush with melted butter. Fold over to a triangle, pressing edges lightly to seal. Place on prepared baking sheet, 2 inches apart. Brush with egg white. Bake 8 to 10 minutes or until golden brown. Serve warm with butter.
